   History

Waverley Estate, established in 1989 and set on 170 acres, is the only Aged Wine Specialist in the Hunter Valley, New South Wales, Australia. The philosophy of the Estate is to achieve low yields of fruit – low yields create intensely fl avoured grapes which attain quality but small quantity. The Estate offers Semillon, Chardonnay, Shiraz and Cabernet Sauvignon varieties. Members of the Waverley Estate Wine Club receive special discounts on wines and exclusive offers.

Since 1989 the wines have been superbly crafted by winemaker Gary Reed, who has a deep passion for excellence. Combining and blending this passion with sound viticultural practices, he has continually produced distinguished Hunter wines made from grapes grown on the Estate.

From the first vintage in 1989 the wines were placed in storage for 10 years and allowed to slumber and mature within a Temperature – Controlled Environment to gain bottle experience.

The Cellar Door is open for friendly and informative wine tastings of the Estate’s Aged and Museum Hunter Wines by experienced members of staff . The Cellar Door is Warm & Cosy in winter and Cool & Comfortable in summer.

   

   The Experience!

Waverley Estate offers a unique tasting of their Aged and Museum Wines. Romance the wines as they romance you.

Experience the rare opportunity and the subtleties of aged wines in a vertical tasting. Sample wines of the same variety, but at different stages of development or try a horizontal tasting of different wines but the same age.

The romance of Waverley Estate Aged Wines is not only the ability for both vertical and horizontal tasting of the wine but to do so with selected foods which are enhanced by the appropriate wines.

Indulge in the sip, nibble and chat luncheon which is an opportunity to share a range of tastes that are broad, distinctive and unforgettable, accompanied by an informal and relaxed fare of delicious platters of local fresh produce.    The Wines!

Many Waverley Estate wines are trophy winners. The 1993 Semillon was awarded the best Semillon in Australia.

Waverley Estate aged Chardonnays are a honey gold colour and show the advantage of having worked hard in the paddock prior to vintage – honey, melon, apple, fig flavours are very apparent.

The local red wine that made the Hunter famous, once called Hermitage. These wonderful aged Shiraz wines exhibit pepper and chocolate characters, unique to the Region.

Cabernet Sauvignon is a wine with more acid than sugar and generally because of its high acid level many will blend Merlot, Malbec, Shiraz and other varieties in an attempt to get that balance that only age can bring. Waverley Estate aged Cabernet Sauvignons are aged without blending, making these wines unique. 

The Sparkling Chardonnay is 100% Chardonnay and processed fi rst as a wine then as Methode Champenoise. Picked early, then bottled, the wine is topped with liqueur of the same vintage. 

Two vintage Ports, unlike others they will last up to a month after opened – a rare characteristic. These are made from Shiraz and Cabernet Sauvignon but not blended. A remarkable achievement by fi ne wine maker Gary Reed.
