Waverley Estate aged Chardonnays are a honey gold colour and show the advantage of having worked hard in the paddock prior to vintage – honey, melon, apple, fig flavours are very apparent.
The local red wine that made the Hunter famous, once called Hermitage. These wonderful aged Shiraz wines exhibit pepper and chocolate characters, unique to the Region.
Cabernet Sauvignon is a wine with more acid than sugar and generally because of its high acid level many will blend Merlot, Malbec, Shiraz and other varieties in an attempt to get that balance that only age can bring. Waverley Estate aged Cabernet Sauvignons are aged without blending, making these wines unique.
The Sparkling Chardonnay is 100% Chardonnay and processed fi rst as a wine then as Methode Champenoise. Picked early, then bottled, the wine is topped with liqueur of the same vintage.
Two vintage Ports, unlike others they will last up to a month after opened – a rare characteristic. These are made from Shiraz and Cabernet Sauvignon but not blended. A remarkable achievement by fi ne wine maker Gary Reed.
